Instructions

  • Cook rice noodles as directed on the package, then drain and rinse with cold water.
  • Bring a pot of water to a boil while the noodles are cooking.
  • Once the water is boiling, add the eggs and cook for 6 minutes for soft boiled eggs.
  • To stop the cooking process, immediately remove the eggs from the hot water and place them in a bowl of ice water.
  • Peel the eggs and cut them in half.
  • Warm the olive oil in a large saucepan over medium heat.
  • Sauté the sliced olives for 2-3 minutes.
  • Stir together the cooked noodles and olives in the pan.
  • Season to taste with salt and pepper.
  • Divide the noodles and olives among four bowls, then top with two soft boiled egg halves in each.
