Instructions

  • In a large pot over medium heat, heat the olive oil.
  • Sauté the onion and garlic until the onion is translucent.
  • Combine the chicken broth, diced tomatoes, celery, chili powder, cumin, salt, and black pepper in a mixing bowl.
  • Bring to a boil, then reduce to a low heat and continue to cook for 10 minutes.
  • Simmer for 5 minutes after adding the shredded chicken and cilantro.
  • Serve the soup immediately, topped with crispy tortilla strips.
