Instructions

  • Cook bacon in a large pot over medium heat until crispy.
  • Set aside after removing from the pot.
  • Sauté the onion and garlic in the same pot until soft.
  • Pour in the butternut squash, chicken broth, cinnamon, and nutmeg.
  • Bring to a boil, then reduce to a low heat.
  • Cook for about 20 minutes, or until the squash is tender.
  • Puree the soup with an immersion blender or in a blender until smooth.
  • Season with salt and pepper to taste after adding heavy cream.
  • Serve immediately, topped with the reserved bacon pieces.
